One Bowl Chocolate Chip Pancakes

sugar, grain, gluten & dairy free, but definitely not flavor free

the easiest and thickest pancakes you’ll ever make

These babies are anti-candida and paleo friendly. They can be Low FODMAP if consumed in small servings (1-2 pancakes)!

These do not need syrup, but if you’re looking for a refined sugar free option check out Lakanto’s maple flavored syrup.

The following recipe makes 8-10 pancakes

  • 1 cup almond flour
  • 4 tbsp coconut flour (can sub cassava flour if needed)
  • 1/2 cup almond milk
  • 1 tbsp monkfruit sweetener
  • 4 eggs (sub flax eggs if vegan)
  • 1 tsp baking soda
  • A dash of salt
  • 1/2 cup chocolate chips (I used Artisan Kettle)

Mix all ingredients (except chocolate chips) together in a large bowl until smooth. Slowly fold in chocolate chips. Scoop 2 spoonfuls onto a hot, greased skillet. Cook until medium brown then flip until fully cooked. Repeat for the rest of the batter and enjoy!
