Mom’s Chocolate Chip Cookies

easy to make gluten and dairy free cookies

thank you to my wonderful and creative mom for coming up with this DELISH recipe

Make these yummy cookies to keep you busy while social distancing, and then you’ll have a great snack to comfort you through these next few (possibly stressful) weeks!

Makes 30 sugary, gooey and chocolaty Low FODMAP cookies

  • 2 1/4 cup gluten free flour
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup raw cane sugar
  • 1 tsp pink Himalayan salt
  • 2 sticks (1 cup) butter — can sub lactose or dairy free option
  • 1/4 cup cacao nibs
  • 1 cup dairy free chocolate chips

Preheat oven to 375F. Combine flour, baking soda and salt in bowl. Beat the butter, sugars and vanilla in mixer until creamy. Add eggs, beating each in separately. Gradually mix in flour mixture, then stir in chocolates. Place mixture into balls on baking sheets.

Bake for 10 minutes, cool and enjoy!

On a serious, these times are crazy and stressful and I’m here if you want to talk.
