Mom’s Gluten and Dairy Free Chocolate Chip Cookies

Thank you to my wonderful and creative mom for coming up with this DELISH gluten and dairy free chocolate chip cookies recipe.

I get my love of baking from my mom, so it’s only fitting she creates a guest recipe. She is my baking inspiration forever.

Make these yummy gluten and dairy free chocolate chip cookies and you may finish them in one sitting! Seriously so thick and gooey–my new favorite cookies. And yes, these are Low FODMAP!

Makes 30 sugary, gooey and chocolaty Low FODMAP cookies

  • 2 1/4 cup gluten free flour
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup raw cane sugar
  • 1 tsp pink Himalayan salt
  • 2 sticks (1 cup) vegan butter
  • 1/4 cup cacao nibs
  • 1 cup dairy free chocolate chips

Preheat oven to 375F. Combine flour, baking soda and salt in bowl. Beat the butter, sugars and vanilla in mixer until creamy. Add eggs, beating each in separately. Gradually mix in flour mixture, then stir in chocolates. Place mixture into balls on baking sheets.

Bake for 10 minutes, cool and enjoy!

As they say, a well balanced diet is a cookie in each hand 🙂
