While I do love pumpkin, I know it’s not everyone’s fave so I wanted to highlight some other fall foods. Apple is such a classic and this is a super easy treat that can be enjoyed as breakfast, snack, dessert and more! So here you are: apple pecan muffins…
This recipe involves minimal ingredients and dishes 😊 It is paleo and keto friendly and can be made vegan as well with an egg substitute.

The following makes 10 apple pecan muffins:
- 1 bag of Explorado Market Sweet Keto Baking Mix
- 2 1/2 tsp cinnamon
- 1/2 tsp pumpkin spice mix
- 2 eggs (can sub flax egg for fully vegan recipe)
- 1/3 cup vegan butter – softened
- 3/4 cup peeled & diced apple (about 2-3 apples needed)
- 1/4 cup diced pecans
Preheat oven to 350F. Line muffin pan and set aside. In a medium sized bowl mix baking mix and spices. In a large bowl whisk eggs and butter until smooth. Then add in dry mix and combine thoroughly. Next, mix in apples and pecans. Add mixture to muffin pan, topping each with a whole pecan. Bake for 20-25 minutes. Once done, let cool for 10 minutes then remove from pan. Optional: sprinkle cinnamon + sweetener on top (I used monkfruit)
Eat right away or put in the fridge for later! They can also be kept in the freezer for extended enjoyment 😉
