Gluten Free Lofthouse Cookies

- 1/2 cup vegan butter softened
- 1 cup powdered sugar
- 2 eggs
- 1/2 tsp almond extract
- 1/2 tsp vanilla
- 1/2 tsp tapioca starch
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 2 cup gluten free flour
Frosting
- 1/2 cup vegan butter
- 1/4 tsp vanilla
- a few drops of food coloring
- 2 cups powdered sugar
- sprinkles
Preheat oven to 375F. Beat vegan butter then add in powdered sugar. Then mix in eggs, almond extract and vanilla.
In another bowl mix all dry ingredients together. Then fold into the first mixture. roll into balls and place on a cookie sheet.
Put in fridge for 7 minutes, then gently press on the tops of the dough balls and round out the edges as needed. Bake for 5-6 minutes until no longer glossy then let cool for 10 minutes on a drying rack. you can start the frosting in the meantime.
Make frosting by beating the vegan butter until fluffy, then mix in vanilla, and a few drops of food coloring. Then beat in powdered sugar (1 cup at a time). Once fluffy, frost your cookies and add sprinkles as desired.
