Do you remember Lofthouse cookies from the grocery store? You know, the really soft sugar cookies with thick frosting. I have wanted to recreate this cookie forever but knew it would take a lot of work for the right texture. I’m excited to share that I figured it out and it tastes EXACTLY like the real thing. These are gluten free and dairy free. They are definitely not a healthy snack, but a great dessert when you really want to treat yourself.
You can change the color of the frosting and sprinkles to make these fit for any occasion as well.
Cookie Ingredients
- Vegan butter
- Powdered sugar
- Eggs
- Almond extract
- Vanilla
- Tapioca starch
- Salt
- Baking soda
- Baking powder
- Cream of tartar
- Gluten free flour
Frosting Details
- Vegan butter
- Vanilla extract
- Food coloring
- Powdered sugar
- Sprinkles
Substitutions:
You can try flax egg to make this vegan, but I have not personally tested this. No other substitution recommendations for this recipe, but if you have any questions or ideas comment below.

Gluten Free Lofthouse Cookies
Ingredients
Cookie
- 1/2 cup vegan butter softened
- 1 cup powdered sugar
- 2 eggs
- 1/2 tsp almond extract
- 1/2 tsp vanilla
- 1/2 tsp tapioca starch
- 1/2 tsp salt
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp cream of tartar
- 2 cup gluten free flour
Frosting
- 1/2 cup vegan butter
- 1/4 tsp vanilla
- a few drops of food coloring
- 2 cups powdered sugar
- sprinkles
Instructions
- Preheat oven to 375F. Beat vegan butter then add in powdered sugar. Then mix in eggs, almond extract and vanilla.
- In another bowl mix all dry ingredients together. Then fold into the first mixture. roll into balls and place on a cookie sheet.
- Put in fridge for 7 minutes, then gently press on the tops of the dough balls and round out the edges as needed. Bake for 5-6 minutes until no longer glossy then let cool for 10 minutes on a drying rack. you can start the frosting in the meantime.
- Make frosting by beating the vegan butter until fluffy, then mix in vanilla, and a few drops of food coloring. Then beat in powdered sugar (1 cup at a time). Once fluffy, frost your cookies and add sprinkles as desired.
