I love trendy foods, but they are rarely tummy friendly. I was excited to see how simple the baked oats trend was, and knew I had to make Gluten-Free Chocolate Chip Baked Oats.

Recipe Details
This Gluten-Free Chocolate Chip Baked Oats recipe is also vegan.
It is a great meal prep option for breakfast, if you double the recipe (and cooking time). The recipe is for a two servings, but doubling will make it perfect for an 8×8 baking pan. It reheats really well.
Think of this as a ~healthier~ cake. You can use a smaller oven safe dish like I did if you want it thicker and fluffier, or a wider pan to create individual slices (like blondies!).
Gluten-Free Ingredients
- Banana
- Gluten-free oats
- Maple syrup
- Almond milk
- Nut butter
- Baking powder
- Baking soda
- 1 tsp vanilla
- Toppings: chocolate chips
Substitutions:
This can be refined-sugar free if you swap maple syrup for a different liquid sweetener. You can also swap in other mix-ins, I’ve also made blueberry and carrot cake versions.

Gluten-Free Chocolate Chip Baked Oats
Equipment
- 1 blender
- 1 oven safe dish
Ingredients
- 1 banana
- 1 cup gluten free rolled oats
- 1/4 cup maple syrup
- 2/3 cup almond milk
- 2 tbsp nut butter
- 1/2 tbsp baking powder
- 1/2 tsp baking soda
- 1 tsp vanilla
- 1/4 cup chocolate chips
Instructions
- Preheat oven to 350F. Blend all ingredients (except chocolate) together until smooth, then pour into an oven safe dish. Mix in handful of chocolate chips. Bake for 35 minutes and let cool for 5-10 minutes.
- Optional: add a piece of chocolate on top when it comes out of the oven so it’s extra melty and chocolatey
- Enjoy right away or store in the fridge for later.

Making this today with apples. This is such a great recipe.
